Potato Chip Fudge Cupcakes

Don’t ask me to explain these Potato Chip Fudge Cupcakes. I’m not pregnant. I’m not high. I just felt like I needed comfort food all in one bite. Cupcakes and potato chips. YASSS. Truth is, one day we were expecting guests I wanted to make something memorable. Something fabulous to deflect that I forgot to make the potato salad, ironically enough. I’m not the best cupcake

Truth is, one day we were expecting guests I wanted to make something memorable. Cupcakes are always a win. And I needed them to be fabulous to deflect that I forgot to make the potato salad, ironically enough. I’m not the best cupcake froster/decorator, so I had to go with a creative taste combo. Believe it or not, but chocolate fudge and potato chips are pretty dang tasty together!

You can do this three ways:

  1. Buy store cupcakes and add your own chips.
  2. Use a cake mix and a tub of frosting (that’s what I did here)
  3. Bake and make everything from scratch (what I’ll do next time).

Bake your cupcakes and let them cool. If you want decorative frosting, use a plastic bag and icing tip. It will give the cupcakes more volume!

Next, the chips. I wouldn’t go too crazy with these. You can use Lay’s or Ruffles. Although I do think jalapeño chips might be fun! Put a couple handfuls in a sealed bag and crumble them. I just used my hands, but you could also set the bag on a table and use a glass to smash the pieces.

Now sprinkle a little bit on top of each cupcake!

OMG, these are sooo tasty! Sweet and sour, creamy and crunchy. This cupcake will definitely wake up your taste buds!
