In need of some Cinco de Mayo recipes?

First, erase the myth that Cinco de Mayo commemorates Mexican Independence Day. Not true. Cinco de Mayo actually remembers the Mexican Army’s surprising defeat of France in 1862. Although not celebrated in Mexico, in the U.S. this day has taken on a life of its own as a time to celebrate Mexican culture and traditions, often with tasty food and drink.

These three delicious recipes from La Tortilla Factory can help you get the fiesta started. The tortillas and recipes are made with simple, good-for-you ingredients with loads of flavor. La Tortilla Factory were the pioneers of Gluten Free, Non-GMO and Low Carb tortillas.

We’re hoping to change the perception of Cinco de Mayo as a time for over-indulgence of greasy food and drink to a time to enjoy better tasting Mexican food that’s also good for you. At La Tortilla Factory, we take pride in our simple, better for you ingredients that make our tortillas so soft and flavorful!

Enjoy these three easy-to-make Cinco de Mayo recipes from La Tortilla Factory:

Grilled Vegetable Tostadas with Guacamole by La Tortilla Factory

Grilled Vegetable Tostada: Baked corn tortillas are a delicious and healthy way to showcase colorful grilled veggies. Cotija is a crumbly Mexican-style cheese that adds a nice salty note. Round out the meal with a side of whole pinto or black beans.

Simple Grilled Fish Tacos by La tortilla Factory

Simple Grilled Fish Tacos: Halibut is a lean, firm white fish that holds up well on the grill. If you can’t find halibut, look for mahi-mahi or sea bass. Look for crema Mexicana in the refrigerated section at the supermarket. If you can’t find it, substitute sour cream thinned with little water until it’s a drizzling consistency. One of these tacos paired with a tossed green salad makes a fresh, light supper.
