Green Chile Pork Stew

I have a new favorite recipe – this green chile pork stew that my husband, Patrick, made. While in New Mexico recently, we picked up a giant bag of fresh green chiles and my mom-in-law roasted them to perfection for us. Wouldn’t you know, this call-out for pork recipes came from PorkTeInspira.com right around the same time. I knew I had to combine the two.

The theme is “Sabrosos Momentos” – celebrating those flavorful, special moments of life, which often involve food. Not just any food, but those dishes that makes you swoon and make you feel a sense of magic.

Example: When we were at the Balloon Festival in New Mexico, we arrived at 4 a.m. While I prepped for my hot air balloon ride, Patrick stayed behind and bought a bowl of green chile pork stew. I didn’t have time to try a bite, but I could tell by the look on his face that it was pretty tasty.

I was like, “I’m leaving to go fly in the air…” and he just nodded and kept eating the stew.

“PLEASE PRAY FOR ME,” I hollered as I walked away backwards and waved goodbye. He blew me a lazy air kiss, nodded and KEPT EATING THE STEW.

So. I had to find out for myself what all the fuss is about and I’m glad I did. The thing about pork is that it’s so affordable, tasty and you can make so many recipes with it. My dad loved to cook all kinds of stews and chiles and pork was always an essential ingredient to give a boost of flavor.

NOTE: This recipe is absolutely perfect for the chilly, winter season. It’s hot and steamy, and we added avocado toast which made it even more of a sabrosos momento! And it has that comfy southwestern vibe!

 

What you need:

1-1/2 pounds of pork, cubed

1 cup flour

3 garlic cloves, diced

1 small onion, diced

cilantro

2 large potatoes

1 large box of chicken broth, 32 ounces

6 large green chiles, roasted and deskinned

Salt and pepper to taste

How to make it:

 

Pour the flour on a plate or in a bowl and add the pork cubes. Toss until they are all covered with flour.

Heat up 2 tablespoons of oil in a pot, medium heat. Once it is hot, add in the pork and toss until browned. Remove the pork and set aside.

Dice up the potatoes, garlic and onion.

Saute the onions and garlic in the pot. Add in the pork and potatoes. Cook until the potatoes are soft.

In the meantime, chop the green chiles and add!

Cook for about 35 minutes on medium high heat until the pork is thoroughly cooked.

Garnish with cilantro on top. Make some avocado toast too!

Cut a bolillo in half, butter and heat on a cookie sheet in the oven. Remove and sprinkle queso fresco, and then avocado slices.
