No-guilt steamed fish – 2 Ways!

How about some steamed fish recipes? If you have made a commitment to give up the gluttony or are just looking to make more healthy meal choices, here is a simple and super fresh recipe, that is sure to satisfy! The best thing about this (aside from the tasty result) is that it is easy and FAST to prepare, cook, and clean. By the time it takes you to go through a drive-thru or deep fry a fish, you could whip this up in no time at all. You’ll feel great inside and out!I’ve also mentioned another method too, if you are cooking for a large group.

#1: Foil-steamed on the stove

Here’s what you’ll need:

1 filet of fresh fish (I used a really nice piece of cod my uncle caught on his last fishing trip).

1 clove fresh garlic.

Grape or cherry tomatoes.

Handful of fresh cilantro.

Slices of lemon.

2 1/2 tablespoons EVOO.

1 teaspoon herbes de Provence

1 green onion roughly chopped.

Salt and pepper.

To begin, cut a piece of aluminum foil that is large enough to wrap and seal your fish. Next, crush your garlic and rub into both sides of your filet.  Season with salt and pepper and herbes de Provence.

Create a little “boat” out of the tin foil and place your seasoned fish, onions, cilantro, lemons, olive oil, and tomatoes on top of the fish. These ingredients will form a sauce in the foil pouch as the fish cooks and they will aid in keeping the filet from becoming dry.IMG_8040

Seal up your foil pouch thoroughly and place in a saucepan on medium-low heat. Normally, I like to cook my fish on a grill because you can cook for the masses, but if you’re cooking for a smaller group you can place the pouches in a shallow pan and cover with a lid. Cook each side for 8-10 minutes.IMG_8043

Once your fish is cooked, open up the foil pouch and you are ready to enjoy a super healthy, guilt free meal…Just like that!IMG_8047

I garnished my fish with sliced avocado (a healthy fat), lemon juice (which aids your metabolism) and chili flakes (because I like my food to reflect my personality….spicy), and paired it with a delicious and hearty spring leaf salad. OMG, so easy!

This meal is super easy,and really tasty.  Just because you are making a choice to eat healthier, doesn’t mean you have to sacrifice flavor.
