The BEST chorizo con huevos y queso recipe is right here, mi gente!
Before I became a full-time designer and blogger, I used to be a movie writer for a daily newspaper. I loved that job and to this day, am still immersed in all things on a screen. Whenever there is a new movie our whole family wants to see, we set up for movie night! That includes an indulgent snacky-type of meal, plus popcorn, frou-frou drinks and more. This is one of our favorite movie-time meals – yes it has eggs, tortillas, cheese and chorizo – but it goes beyond breakfast. OMG, wait until you see the recipe, I picked it up from from my Nana Cano!
OK, on to the recipe!
You will need:
- 1 (9 oz) package of Cacique® Beef Chorizo (or Cacique® Soy Chorizo)
- ½ package (5 oz) Cacique Ranchero® Queso Fresco, crumbled
- Cacique® Crema Mexicana
- 2 tortillas
- 4 eggs
- Butter
- Pepper and garlic salt to taste
First you’ll need to cook the chorizo in one pan – I cook it on medium high for about 10 minutes until it is cooked all the way through. In the other pan, place 1/4 stick of butter in a pan and tear up the tortilla into little pieces. You’re going to brown the tortillas on medium until they are crispy. That’s what will make it taste super yummy!
Once the tortilla pieces are all crispy and brown, then add the eggs and cook. You want the eggs to coat the tortillas.
Now pop open the Cacique Queso Fresco and crumble it into the tortilla and egg mixture. Around this time, your chorizo should be done cooking.
Spoon the chorizo into the center of a serving platter. Then add the tortilla mixture around the outside. Next drizzle on some Cacique® Crema Mexicana. Time to serve!
Here’s how it looks when you’re done. If you want, you could also mix it all together, but I like them separated!
